Ingredients.

Fried Spring Rolls with Chicken, Shiitake Mushrooms, and Bimackle

Ingredients (Makes about 10)

01. 

10 spring roll wrappers 

02. 

300g minces chicken thigh (coarsely ground) 

03. 

90g onion (1/3 cup)

04. 

4 dried shiitake mushrooms (15g)

05. 

1 bimackle (5g) 

06. 

2g salt 

07. 

8g oyster sauce 

08. 

6g fish sauce 

09. 

1g black pepper 

10. 

1 egg

11. 

1tsp flour

Water (adjust amount accordingly)

Method 

01. 

Soak dried shiitake mushrooms in water as per packet instructions then drain water and cut into 0.5cm cubes.

Finely chop the onions and bimackles

03. 

Mix ground chicken, shiitake mushrooms, onions, bimackles, oyster sauce, fish sauce, egg, salt and pepper in a bowl.  

04. 

Spread out the spring roll wrapper, with the corner facing you. Divide mixed ingredients into ten equal portions then place one portion on wrapper and roll from the front.

Mis flour and a bit of water together to make a glue like mixture. Apply to the edge of the wrapper and seal together.

Heat pol and fry at 170°c for 6 to 7 minutes.

Serve hot and enjoy! Sometimes we add corn as well.

For an added sweetness, corn is also a great addition to this recipe. You can swap the shiitake for them or load them in as well.
